A Gluten Free Christmas at Sue’s

Christmas is just over 2 weeks away! I don’t know about you, but this year has been so busy that Christmas has just crept up on me, and I’m looking for some quick and easy options for the big day with my family. Now that I’ve settled on some of my menu, I’d like to share my choices with you; they’re all available from our shop and internet store.

It’s always nice to have some ‘nibbles’ available for early birds and unexpected visitors. I’m going to have some Leda Rumballs on my table, or if I’m feeling energetic, I might make some using Funch Almond and Cacao Protein Ball Powder, and add a little rum instead of some of the water. I’ll make some mince pies and sausage rolls using some Simply Wize Frozen Puff Pastry, and of course there’ll be lots of Irresistible Gluten Free lollies; Snakes, Jelly Beans, Milk Bottles, Banana sand Chocolate Coated Honeycomb.

I’ll stuff my chicken (or if I feel ‘posh’, turkey) with home made stuffing based on one of the amazing Zehnders breads, and serve sides including Ceres Organics Quinoa Tabbouleh and Salad Beans, and a big green salad dressed with one of the many tasty Maleny Cuisine salad dressings.

This year, I’ll also go all out with dessert, using Dr Schar Savoiradi Biscuits to make Tiramisu, and heating up one of Grandmas Puddings gluten free plum puddings to serve with some Orgran custard.

Whatever you decide to cook for your special Christmas Day, we at Sue’s Gluten Free wish you a very merry Christmas and a safe and happy New Year. We will have the shop closed between Christmas and January 18, but will still be processing and sending our internet orders and delivering orders to our very local customers at no cost.

Gluten Free Peanut Cookies

Makes 24 Cookies

  • Gluten Free
  • Dairy Free
  • Egg Free
  • Fructose Free

  • ½ teaspoon salt
  • 1½ Teff flour
  • ½ cup of dark chocolate bits (gluten free)
  • ½ cup maple syrup
  • ½ cup coconut oil, in liquid form
  • 1 teaspoon vanilla essence
  • 1 cup  peanut butter
  1. Preheat the oven to 120 degree Celsius and line a tray with greased baking paper.
  2. In a large bowl combine the Teff flour, salt and dark chocolate bits and set aside.
  3. In a food processor combine all the remaining ingredients and process until smooth.
    • Hint: If your coconut oil is solidified microwave it first.
  4. Add your processed mixture to the Teff flour mix and stir until incorporated. The batter will be thick, but will still be moist when you pick it up with your hands.
  5. Use a tablespoon to scoop some of the mixture. Roll each portion in between the palms of your hands until smooth and round. Place the round ball of the prepared cookie sheet and gently press down with a fork to flatten.
  6. Bake for 18-20 minutes then cool completely before serving. The cookies will be fragile when they come straight out of the oven, allow them to cool completely before handling.


Helpful Hint:

You can make the batter 24 hours in advance and place it in an airtight container in the fridge and let it sit outside for about one hour before baking.
